Aritsugu kasumi deba made in Japan. The carbon steel blade (white steel) is not stainless steel and must be cared for properly. Deba blades are thicker and heavier than other blades and can be used for cutting meat, fish or chicken. Should not be used with frozen food. It should be thoroughly cleaned and dried after use to prevent staining. The handle is Japanese yew with a water buffalo horn bolster. Note: color of bolster may vary.
